In Japan, the Santoku knife was modeled after the Nakiri vegetable cleaver but easy enough for home cooks to use. Literally, "three virtues," Santoku knives are known for their versatility in chopping, slicing, and dicing meat, fish and vegetables. This 7" Santoku knife has a razor sharp X50 Cr MoV15 German steel blade, high in carbon for hardness to help keep its edge, yet containing 15 percent chromium to make it stainless. The stamped blade has a Granton edge that allows you to cut exceptionally thin slices. The ergonomically designed slip-resistant, stain-free white polypropylene handle offers extraordinary comfort and reduces arm and hand fatigue. The handle also has a protective finger guard, and the knife is NSF listed, which means it won't harbor bacteria if properly washed in a dishwasher or by hand.
