Maintaining Your Fryer: 4 Essential Tips

Posted by chefal under: Equipment Maintenance & Tips .

Fryers have the power to make most ingredients delicious, popular, and appealing. Sadly, they aren’t a dieter’s best friend.

If your fryer isn’t performing well it can slow up your kitchen’s operation and negatively effect business. Also, if you don’t maintain your fryer you run the risk of it breaking down on you at the worst possible moment.

In this economy you can’t risk equipment failures so we decided to give you a few helpful tips that will help you maintain your equipment.

1. Invest in Quality Oil Filters: If you have a great oil filter you can reuse oil for a longer time period…

2. Get a “Cold Zone”: Invest in a fryer that has a “cold zone” or a deeper well where frying debris can collect so they don’t get re-fried and burned. Re-fried debris will burn and taint the flavor of your oil. Make sure to clean out the cold zone often so it doesn’t overfill.

3. Clean Your Oil: If you clean your oil twice a day it can last for around 20 days. If you don’t clean your oil often it will only last a few days. However, changing your oil often will prolong your fryer’s life and guarantee your food is always good.

4. Clean Unit Thoroughly & Regularly: Fryers create tons of grease and unfortunately it’s your job to keep them as clean as possible. If grease builds up on your fryer parts it may cause them to wear down or break. Ensure that you keep your fryer clean at all times. Set a time for you and your staff to clean your fryer. If your fryer isn’t getting hot enough there’s a big chance your fryer is being weighed down by grease build up.
