Restaurants and Institutions (R&I), a trade publication serving food service professionals at independent restaurants, chains and institutions, makes an annual list of America’s top 100 most successful independent restaurants. “Independent” is defined here as any restaurant brand with fewer than five locations. Those are the restaurants that have fared very well financially in the past year. As R&I points out, what makes or breaks the restaurant to make it to the list is that the most successful restaurants know their financials, such as food-and-beverage sales, they know how many meals they served in the past year, what is the share of revenues accounted by food, wine and other alcohol beverages. Successful restaurants stress the importance of hospitality and personable service. Here are the top 7 most successful restaurants for 2009 according to R&I’s list:

TAO, Las Vegas. Tao is located at The Venetian Resort Hotel Casino. It is rightfully considered the hottest restaurant and nightclub on Las Vegas strip. Tao bistro offers the Pan-Asian cuisine, with a perfect blend of food, music and people-watching. The place is frequented by celebrities, such as Britney Spears, Paris Hilton, Madonna, and Jessica Simpson. Architectural design alone is quite impressive: a 42,000 square feet entertainment complex features a large banquet facility with a 20-foot-tall Buddha floating above an infinity pool.

JOE’S STONE CRAB, Miami Beach. This is a legendary restaurant that has become a symbol of Miami Beach restaurant scene. It has been in operation for 98 years and is famous for its outstanding seafood and steak menu. The restaurant boasts an upscale fine dining menu, yet has a friendly, home-like atmosphere.

SMITH & WOLLENSKY, New York City. Smith & Wollensky is America’s famous premier traditional steakhouse. It’s one of the most popular food establishments in New York. It specializes in steaks and chops, fresh seafood and lobster; the restaurant has a spectacular steakhouse menu and a large selection of high-end red wines. The restaurant arguably has the most knowledgeable wine service staff in the industry.

TAO, New York City. This restaurant, like its counterpart in Las Vegas, specializes in Hong Kong Chinese, Japanese and Thai cuisines, featuring such items on the menu as Kobe beef, Peking duck, Shanghai-style soup dumplings, Chilean sea bass, and Wasabi-crusted filet mignon. Tao in NYC is considered to be one of the city’s hippest night clubs, with cool ultra-lounge facilities and a sixteen-foot statue of Buddha on the premises.

OLD EBBITT GRILL, Washington. Located just steps away from The White House, Old Ebbitt Grill used to be frequented by a lot of Presidents, including President Grant, Cleveland and Theodore Roosevelt. It is still a popular gathering place for politicians and celebrities. The restaurant has an ambiance of an old style American saloon, with mahogany and velvet booths and bars set in marble.

BUDDAKAN, New York City. This chic, fun and hip restaurant in the Meatpacking district of Manhattan boasts gigantic space of 31,000 square feet and the capacity of 700 seats. It’s often called a “Buddha Bar from Paris” because that’s how the restaurant founder, Stephen Starr, envisioned the restaurant to be: Buddakan features a fusion menu, infusing modern Asian dishes with French essences.

JOE’S SEAFOOD, PRIME STEAK & STONE CRAB, Chicago. In 2000, Joe’s Seafood, Prime Steak & Stone Crab opened proudly in Chicago, the result of the partnership with the Weiss family, who are owners of Joe’s Stone Crab, the famous Miami Beach Restaurant. Joe’s Seafood has since become one of the most popular dining spots in Chicago. The menu features prime bone-in steaks and a great selection of fresh seafood that is flown in daily, including the famous Florida Stone Crab claws. The menu also features signature dishes such as 16 oz. Bone-In Filet Mignon and 22 oz. New York Strip Steak.
